What is BRITISH month without a recipe from Mary Berry, the Queen of Cakes from England?? Here is a cake that is worthy of a queen, Victoria Sandwich!!
One of my favorite baking show (I have many shows that I like!) that I love to watch is The Great British Bake Off. It’s a baking competition that started in 2010 with Mary Berry and Paul Hollywood as judges. You can binge watch it on Netflix. But word of caution, you will get really hungry when you watch it!! ? Mary Berry and Paul Hollywood is fun to watch and you will see so many cakes that you have never seen in your life before. It’s really interesting and educational.
Now the Victoria Sandwich itself is said to be named after Queen Victoria. How is she related to Queen Elizabeth? Well, she is the great-great-grandmother of Queen Elizabeth. Fun facts about food always amaze me.
So to put them together, I put in the quintessential dessert from England to the Queen of Cakes, and what do we have? Mary Berry’s Victoria Sandwich!
This recipe is very simple to make and really fast. Measure, whip and bake! After the cakes are ready, the next step is to make the whipped cream if you are making a homemade whipped cream.
I mix the eggs first and measure all the dry ingredients. Remember to use the scales!! After mixing the eggs and the dry ingredients, and the softened butter into the mixture. Mmmm… Butter…. ?
Here is what the mixture looks like when you add the butter and when you finish mixing the butter in. It looks beautiful!!
Separate the batter into 2 greased baking pans. I like to weigh my batters so that it will be even.
Then, it’s assembly time!!! Cakes, whipped cream, and strawberry jam.
Put the cake onto your cake stand. Put a layer of strawberry jam. Don’t be shy and really put that layer on.
Then next put the layer of whipped cream onto the strawberry jam. It doesn’t have to be perfect because it’s suppose to be delicious and rustic!!
Put the other cake onto the top of the whipped cream layer. You want to gently pat it so that it doesn’t move around a lot.
Then let it snow!! Using a strainer and powdered sugar, dust the top of the cake evenly.

- 4 eggs
- 8 oz sugar
- 8 oz self-raising flour
- 2 tsp baking powder
- 8 oz butter, room temperature
- strawberry jam
- whipped cream
Ingredients

- Preheat oven to 350 degrees F. Grease and line 2 8-inch round baking pans with parchment papers.
- In a stand mixer, mix the eggs. Add all the dry ingredients and mix again.
- Add the butter and mix until the batter is evenly mixed. Be careful not to overbeat.
- Divide the mixture into the 2 baking pans. I like to use my scale to make sure that it is evenly divided.
- Bake for 20-25 minutes and check for doneness with toothpick. Let cool for 5 minutes then take it out of the pan. Let cakes cool on a wire rack before assembly.
- To assemble the cake, put the cake unto serving plate. Spread the strawberry jam on top and make an even layer. Add a layer of whipped cream and spread evenly. Put the second cake on top. Dust with powdered sugar.
