It’s not just pretty, it’s delicious!!! This Strawberry Tart has 3 parts but they are all very easy to do! 12 DAYS OF CHRISTMAS PIES AND TARTS is getting sweeter everyday!
Alrighty… Christmas is one of my favorite holiday of the year. This is usually the busiest, most fun, memory making season and I love baking even more during the month of December. One of the best memories that I have is making cookie tray for friends (my real families are too far ? so my framilies are the lucky recipients! There are people who planned their cookie tray a year in advance. They also freeze the cookie dough then bake them during Christmas week. There was someone who made 12 different kind of cookies in her cookie tray. Now that is a challenge that I have not conquered yet. That will take a lot of planning, a lot of freezer space and a lot of butter!!
This tart is a really fun recipe to make. It’s easy, fool proof, and the ingredients are probably things that you have in you pantry and fridge. Now for the fruit, because it is a strawberry tart, I used strawberries. But if strawberries are not your favorite, I think you can top it with any kind of berries. Maybe blueberry and raspberry. But those two fruits are going to be more expensive then strawberries and you’ll probably need a whole lot more. But if they are in season and on sale, why not?!
Let’s make the crust. In a medium bowl, mix together flour, salt and sugar.
Add the melted butter to flour mixture and mix until it comes together.
Place it on a removable tart pan and cover the bottom and sides. You don’t have to roll out the crust, you can just use your fingers. It’s very easy to shape. Pricks all the bottom and sides with a fork before baking it for about 25 minutes.
Once the tart is done, remove it from the tart form and place it on the serving plate. This way, you don’t have to fill it then move it to your serving plate. You might break the tart when you transfer it once it’s filled because it might be too heavy with the filling. So make sure to put it on a pretty serving plate before doing the filling and topping.

- 1/2 cup heavy cream
- 16 oz cream cheese (2 blocks) softened
- 1/2 cup sugar
- Juice and zest of 1 lemon
- 1 tsp vanilla extract
- 1 1/2 lb Strawberries hulled and sliced
- 3 tbsp strawberry or raspberry preserves

- Preheat oven to 350°.
- In a large bowl, whisk together flour, sugar, and salt.
- Add melted butter and stir until dough forms.
- Press mixture into a 10" or 11" tart pan with a removable bottom, pressing until dough is smooth.
- Prick the sides and bottom of the tart pan with a fork and bake until golden, 25 to 30 minutes. Let cool completely.
- In a stand mixer bowl, beat heavy cream until stiff peaks form. Set aside.
- In the same stand mixer bowl, beat together cream cheese and sugar until smooth.
- Add lemon juice and zest, and vanilla. Beat until combined.
- Fold in whipped cream, then spoon into cooled crust and smooth top.
- Starting on the outside, arrange the sliced strawberries on top of tart in a circle until entire tart is covered. Cut the top of the strawberry as the center of the tart.
- In a small microwave-safe bowl, heat together preserves and 2 teaspoons water until warmed, 30 seconds. Brush over tart and refrigerate until well chilled, 2 hours.
