Summer + Food = Hand Pies!!! Made that equation up ? This month will be all about HAND PIES. Delicious treats that doesn’t need a fork or plate, just your hand!! The first recipe is Strawberry Nutella Hand Pies. Yummmmm!!!!
Pie crust is very simple to make. It just takes some fridge time, but to make one, you will only need about 10 minutes.
First step is to get a large mixing bowl. Why a large one? It’s so that you will have space to cut the butter in. You want to use one that is bigger than the amount of flour that you have. You want to have all the ingredients ready or “mise en place“, if you will. It’s nice to have everything ready because you will be using your hands to mix and you won’t need to go back and forth to get the rest of the ingredients and keep washing your hands.
The bowl has flour, sugar and salt. As you can see, there is ice in the measuring cup. You want the water to be ice-cold with ice and not just cold. We want the ice water because it helps keep the fat of the butter cold so it does not melt.
Now cutting in the flour. There are many techniques to cut the butter in. You can use pastry cutter, food processor, even your mixer. But my preference is still using my hands. Or maybe it’s just an excuse to play with my food. ? I like to use my hands because I can feel how the butter is mixed in or not. I tried everything else and I still think using your hand have the best way to tell if your crust is ready or not.
When the butter is the shape of a crumble, sprinkle lightly the ice water. The key word is SPRINKLE. Then bring it all together to make a ball.
Put this beauty to rest in the fridge for about an 1 hour. When you are ready, take it out about 10 minutes before you are making the pie, to bake this beautiful, flaky, delicious pie crust.
Now comes the fun part. Roll out the pie crust on your silpat. With a cookie cutter cut out the shape that you want. For this recipe, I am using the heart cookie cutter. Brush the edge of the heart with the egg wash. This is the “glue” for when you are putting the top crust.

Add a thin layer of happiness .. I mean, Nutella, in the middle of the heart.
Put a little bit of the chopped strawberries on top of the Nutella. It’s more a one layer deal than a mound.
Put the top crust then crimp it with a fork. This “glues” down the top and bottom crust together.
Brush the edge of the pie with egg wash. It will make it golden delicious after you bake it. Important step!!
Then sprinkle sugar on top of the egg wash. This is for the crunch!!
The best part about this treat? It bakes in about 12-13 minutes!!! How awesome is that??
Tips for making this Strawberry Nutella Hand Pies:
- The crust is great to make ahead. It will keep in the refrigerator for about 5 days or the freezer for about 1 month.
- Roll out the pie quite thin so that it will be crunchy.
- I like to sprinkle a little bit more sugar after it is bake. Just a little bit!

- 2 1/2 cups flour
- 1 cup unsalted butter, cold and cut into cubes
- 1 tsp salt
- 2 tsp sugar
- 4-6 tbsp ice water
- 1/2 cup strawberries, cut into small pieces
- 1/4 cup Nutella
- 1 egg, lightly beaten
- 4 tbsp sugar

- Put flour, sugar and salt in a large bowl and mix together.
- Cut in the butter into the flour until it becomes crumble like.
- Sprinkle the water and bring the crust together. It it is too wet, add more water. If it is to crumbly, add water little by little.
- Shape into a disc. Wrap with plastic wrap and put in the fridge for 1 hour.
- Remove the disc from the fridge about 10 minutes before you are ready to bake. Preheat the oven to 425 degrees F.
- Roll out on the lightly floured surface. Cut using the cookie cutter. Prepare 2 parchment-lined baking sheet.
- Brush the outside of the bottom crust with egg wash. Put a thin layer of Nutella in the center of the crust. Add a little bit of the diced strawberries on top.
- Put the top crust and crimp the edges with a fork. Brush the top crust with egg wash and sprinkle with sugar.
- Put on top of the baking sheet and bake for 12-13 minutes. You can sprinkle a little bit of sugar when done.
