Mmmmm ….. Cookie!!!! Mmmmm …… Ice cream !!! What a way to cool off in the summer!!! For ICE CREAM COOKIE SANDWICH month, we are going to start with… Strawberry Lover’s Ice Cream Cookie Sandwich!!! When you bake this cookie, your house will smell like strawberries!!
Who loves Ice Cream Cookie Sandwich? ??♀️ This treat is so easy to make, don’t need any serving spoon or plates, and can feed a bunch of people! There are so many flavor combinations that you can do with ice cream cookie sandwich. Whatever your heart desires!!! You can also make the cookie ahead of time and then start assembling the sandwich right before serving. It’s a really fun and easy dessert to make.
When I made this strawberry cookie, oh the whole house smells like strawberry!! It will be so great!! The strawberry puree is the key to making the cookie. It’ so easy to make and it’s going to be so worth the cleaning!!!
So to make the puree, blend your strawberry in a mini blender. It looks like 2 cups of strawberry is a lot but after the blending and straining, you will only be left with about 3/4 cup of the strawberry puree.
After it’s pureed, you want to strain the puree so it will become nice and smooth. Push the mixture with the back of a spoon or a ladle to push the mixture out. It’s so pretty and colorful!
To make the cookies, you start with the usual star of butter and sugar. Mix the butter and sugar with your stand mixture until it’s light and fluffy.
Add the eggs one by one and then add the strawberry puree and vanilla extract. After that, add the food coloring. Adding it will make the cookies pink and beautiful!!
While the mixer is on, add the dry mixture that you have prepared in the beginning. Gently mix until all the mixture is incorporated. You do want to scrape to the bottom of the bowl because sometimes the butter mixture has not been thoroughly mixed.
I love the how the mixture looks. It’s so pretty!!
Roll a scoop of the cookie mixture on to the bowl of powdered sugar. Keep rolling it and then shake the excess powdered sugar.
Space out the cookies onto the parchment lined baking sheet. I usually just fit 8 cookies onto the sheet.
Once all the cookies are baked and cooled, you are ready to make your sandwiches!!! My youngest loves ice cream and every Friday, we always go get ice cream from Baskin Robbins after school (What a lucky kid!!). So all the ice cream that I will be using for the ICE CREAM COOKIE SANDWICH month will be from Baskin Robbins!! I paired this Strawberry cookies with Strawberry Ice cream. That’s why I’m calling it Strawberry Lover’s Ice Cream Cookie Sandwich!!! Hooray for Strawberry!!!

- 3 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup butter
- 1 1/2 cups sugar
- 2 eggs
- 3/4 cup strawberry puree (from 2 cups of strawberries)
- 1/2 tsp vanilla extract
- 1/2 tsp red food coloring
- 1/2 cup powdered sugar

- Preheat oven to 350 degrees F and line 2 baking sheet with parchment paper.
- To make the strawberry puree, put the 2 cups of strawberries in a blender. Strain the puree with a strainer until you are left with 3/4 cup the puree.
- In a medium bowl, whisk together flour, baking powder and salt. This is the dry mixture.
- In a stand mixer bowl, beat together butter and sugar until it becomes light and fluffy. Add eggs one at a time and beat until everything is mixed evenly.
- Pour in the strawberry puree and vanilla extract. Mix again and scrapes the sides. Add the food coloring and mix again.
- While the mixer is one, add the flour slowly and mix until all the dry mixture is incorporated.
- Take the bowl off the mixer. Scrape the bottom of the bowl and make sure that everything is mixed evenly.
- Prepare a small bowl with powdered sugar. With a small ice cream scoop, scoop out the cookie and drop into the bowl. Roll the cookie around, shake the excess sugar and drop it onto the parchment paper lined baking sheet.
- Bake for about 15 to 17minutes. Cool on the baking sheet for 5 minutes and then transfer to a wire rack.
- To make the ice cream cookie sandwich, put a scoop of ice cream in between two cookies and gently sandwich it together. You can eat right away or if you are making it ahead, wrap the sandwich individually with plastic wrap.
