A cookie that melts in your mouth and has crunch too!! How could it be? Well, if you bake them, you’ll find out!! For the 7th day of 12 DAYS OF CHRISTMAS COOKIES, let’s enjoy Russian Tea Cookies!
Oh boy was I glad that I tried baking this cookie!! I was unsure in the beginning about the texture but after it was done, I couldn’t stop eating it!! Passed the kitchen, ate one. Getting something to drink, ate one. On the way to pick up my son, ate one. It was that good!! And you know anything that’s rolled in powdered sugar is going to be delicious!! ?
This cookies really reminds me of snowballs. When living in Colorado, I loved the snow. Yes, it was hard having to shovel the snow and drive in the snow. But there was snow days and snow ball fights!! Every winter, me and the boys plays snowballs fight. It’s so much fun and the boys always had a blast. It was cold, messy, and we had to make a deal that it’s all fair game. No family just one team versus one team. ? Here’s a picture of how thick the snow gets in Colorado !! Doesn’t it look like a cake?!?!
Before you make this cookies, you need to check that you have the walnut in your pantry. This is where you get the crunch! To start, you cream together butter and vanilla extract. Then add the powdered sugar and flour together. Once you have that dough, as you can see in the picture below, you can add the chopped walnut into the mixture. I like mine mini like in the picture but you can also chop it finer if you like smaller pieces.
Then with a 1 inch ice cream scoop, scoop out balls of the dough and place it on to a parchment lined baking sheet.
After baking it for about 12 minutes, you want to cool it first on a baking rack. If you do it right away, it will melt away the powdered sugar. After it cooled for 10 minutes, you can roll it on the powdered sugar.
It reminds me of our snowballs fights in Colorado !! But instead of throwing these at your kids, you can actually share it with your kids and eat them!! ?
