RED WHITE AND BLUE COOKIE CUPS

To celebrate 4th of July, why not try making this Red White and Blue Cookie Cups?  It’s cute, sweet, easy to bring to parties and it has fruit!!   You really can’t go wrong with the combination of red velvet cookie, creme cheese frosting and blueberries.  Also, any treats that has fruit in it, makes it healthy right?  😛

 

 

So, what’s your favorite thing about 4th of July?  My favorite thing about 4th of July, besides the 3Fs (Family, Friends and Food) is the final F.  The Fireworks.  When I was young, I used to lived in Maryland for about 4 years.  Washington DC was just a hop, skip and a jump away from our house so for 4th of July, so my family went to the National monument to see the fireworks.  We packed our blanket, our food, our games, and rode the subway (parking was going to be crazy) to the Mall.  Once we got there, we played frisbee, laid our picnic blanket on the grass and just have a great time with friends and family.

After we finished playing and our belly are full, we waited and waited for the Fireworks.  And waited.  And waited.  Until finally, at around 9 o’clock at night, the fireworks finally started!  It was beautiful!  It was totally worth the wait!!  It started with the small fireworks and then it got bigger and bigger until you see the biggest one and it was just spectacular!!  What’s amazing about it was the fireworks was it even synced with the music!  You really can’t helped to be moved.  It was a great time with friends and family and I don’t think I will ever forget it.

Now, here’s how we do the cookies.  Once you finished making the dough, you can divide the dough into a greased 24 mini muffin cups.  You can use a spoon and make it into a ball or you can use an ice cream scoop to get a uniformed cookies.

 

 

Now after you baked it, let it cool for about 3 minutes.   For the next step, you need to move fast.  With a 1/2 teaspoon measuring spoon, push the cookie balls to make a well .  Don’t be shy!  You need the well to be deep so you can put in the creme cheese frosting.

 

 

After you make them into cups you need to cool them in the pan for about 5-10 minutes so that it will stay that shape.  And when you are done, here they are!!!   Aren’t they cute??

 

 

Now, it’s frosting time!  The recipe is really easy and simple.  I used an open star tips to do the piping.  The small one should be good because I was not using a lot of frosting since the cups was mini.

 

 

The next step is just putting the blueberries on top and you are ready for your 4th July party!

 

 

Tips for making this Red White and Blue Cookie Cups :

  • Grease the muffin pan well so the cookies will slide away easily.
  • You can make this one day ahead and put the cookie cups into an airtight container.  Add the frosting the day of the party.

  1. In the bowl of a stand mixer, beat butter and cream cheese until smooth. Mix in the powdered sugar and vanilla. Beat until everything is well combined.
  2. Add blueberries on top of frosting.
