RED VELVET WHITE CHOCOLATE CHIP COOKIES

 

If you are looking for a festive holiday cookies for your cookie exchange, look no more!!   Fast to make and a delicious combination of red velvet and white chocolate.  5th day of 12 DAYS OF CHRISTMAS COOKIES is a festive box filled with Red Velvet White Chocolate Chip Cookies!!

 

 

Who loves Red Velvet ?!?!  ??‍♀️  I’m a big fan of red velvet in and how you can make it into so many recipes!!  Cheesecake, cake, cookies, pie, and just about anything!  And for the holidays, it’s really festive and beautiful!!

Well, as I mentioned on the top, this cookie is great for cookie exchange.  Funny story,  but the first time I went to a cookie exchange, there were 2 things that were wrong.  I did not know how to bake and I had no idea what a cookie exchange was!!  This was pre-blog phase of my life.  So in case you get invited to a Cookie swap or cookie exchange, here are a few things that you need to know..

A cookie exchange is when 7-8 friends gather together and each person bring a dozen or more cookies to share.  At the party, each of them sample a treat.  Then at the end of the party, everyone packs a cookie from each friends.  So you bring a treat and you come home with brand new treats!!  What a fun way to try different recipes without actually making them!

If you were to host a cookie exchange, here are a few tips:

  • You can ask everyone to bring a copy of their recipe.  That way everyone comes home with one.
  • Prepare some cute boxes for everyone to bring their goodies home.  Boxes, ribbon, and everything cute!
  • If you want to keep it simple, you can also use festive plates.  They’re usually available at stores during this time of year.  Just make sure you have plenty of plastic wrap so they’re cookies won’t fly to the floor of their cars!
  • Have fun and make it a party!!  Put on Christmas music and prepare hot chocolate, tea or apple cider.

When making cookies, there are usually 2 parts.  Butter mixture, which is butter mixed with sugar, eggs, and vanilla extract.  The dry mixture, usually have the main players like flour, baking powder, baking soda,  Off course it varies with different recipes.  Now recipes usually starts with creaming the butter.  But I always like to prepare my dry ingredients first.  That way I don’t have to stop in the middle of the preparation to get my dry ingredients ready.  So here it is!!  The dry mixture.  First I whisk together the flour, cocoa powder, baking powder and baking soda.

 

 

 

Then I cream the butter and sugar until it’s light and fluffy.  It usually takes about 1 minute.

 

 

Next we add the egg and vanilla extract.  And mix away again.  Don’t forget to scrape the sides of the mixing bowl!

 

 

Add the red food coloring and mix again to a beautiful red color butter mixture.

 

With the stand mixer on low speed, add the dry mixture. Then mix everything until it’s all combined.

 

 

Add the white chocolate chips and mix again.  Using low speed is the best because you don’t want to break apart the chips.

 

 

Chill the dough in the refrigerator for about 30 minutes.  Be patient, you’re almost done!!  ?

 

 

Once it’s chilled, get ready to bake!!  Scoop the dough unto the parchment-lined baking sheet.

 

 

After putting the dough on the baking sheet, you can add a few pieces of white chocolate chips on top. Bake for 9 minutes and let cool on the parchment paper before you enjoy them!!

 

 

Look at how pretty they are!!  Who wouldn’t want a box of this cookies for Christmas!!

  1. In a small bowl, whisk together the flour, salt, cocoa powder, baking powder, and baking soda. This is the dry mixture.
  2. In a stand mixer bowl, mix together butter and salt until it's light and fluffy.
  3. Add the food coloring and mix again. Scrape the sides and mix until all the food coloring is combined.
  4. In a low speed, add the dry mixture into the stand mixer bowl and mix until combined.
  5. Add the white chocolate chips and mix again. Chill the dough in the refrigerator for 30 minutes.
  6. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  7. With a 1 inch ice cream scoop, scoop out the the dough and top it with a few white chocolate chips.
  8. Bake for 9 minutes. Let the cookies cool on baking sheet before removing to cooling rack.
