Preheat oven to 350 degrees F. Grease and line 2 8-inch round baking pans with parchment papers.
In a stand mixer, mix the eggs. Add all the dry ingredients and mix again.
Add the butter and mix until the batter is evenly mixed. Be careful not to overbeat.
Divide the mixture into the 2 baking pans. I like to use my scale to make sure that it is evenly divided.
Bake for 20-25 minutes and check for doneness with toothpick. Let cool for 5 minutes then take it out of the pan. Let cakes cool on a wire rack before assembly.
To assemble the cake, put the cake unto serving plate. Spread the strawberry jam on top and make an even layer. Add a layer of whipped cream and spread evenly. Put the second cake on top. Dust with powdered sugar.
