Ingredients

cups
bran cereal
1 1/3
cups
fat-free milk
1
egg
1/4
cup
vegetable oil
1 1/4
cups
flour
1/2
cup
sugar
1
tablespoon
baking powder
1/4
tsp
salt
Instructions
Preheat oven to 375 degrees Fahrenheit. Line muffin pan with muffin liner.
In a medium bowl, mix together bran cereal, milk, egg and oil. Let stand for 2 minutes to soften the bran cereal.
In a stand mixer, mix together flour, sugar, baking powder and salt.
On a medium speed, slowly pour in the bran mixture into the flour mixture. Mix on medium for 5 seconds and then use your spatula to do the final mix.
Bake for 20- 22 minutes.
