With bran as one of the ingredient, this muffins recipe that is tasty and a good way to getting your fiber. Quick to whip up and it is freezable.

  1. Preheat oven to 375 degrees Fahrenheit. Line muffin pan with muffin liner.
  2. In a medium bowl, mix together bran cereal, milk, egg and oil. Let stand for 2 minutes to soften the bran cereal.
  3. In a stand mixer, mix together flour, sugar, baking powder and salt.
  4. On a medium speed, slowly pour in the bran mixture into the flour mixture. Mix on medium for 5 seconds and then use your spatula to do the final mix.
  5. Bake for 20- 22 minutes.
