- 2 cups bran cereal
- 1 1/3 cups fat-free milk
- 1 egg
- 1/4 cup vegetable oil
- 1 1/4 cups flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/4 tsp salt

Instructions
- Preheat oven to 375 degrees Fahrenheit. Line muffin pan with muffin liner.
- In a medium bowl, mix together bran cereal, milk, egg and oil. Let stand for 2 minutes to soften the bran cereal.
- In a stand mixer, mix together flour, sugar, baking powder and salt.
- On a medium speed, slowly pour in the bran mixture into the flour mixture. Mix on medium for 5 seconds and then use your spatula to do the final mix.
- Bake for 20- 22 minutes.
