Ingredients
Sweet potato souffle
- 2 cups sweet potato peeled and cut into small pieces
- 1 cup brown sugar
- 3/4 cup sugar
- 2 eggs
- 8 tbsp butter room temperature
Cornflakes topping
- 2 cups cornflakes cereal crushed into medium pieces
- 6 tbsp butter melted

Instructions
- Boil the sweet potatoes in a pot for 15-20 minutes until soft.
- Preheat the oven to 350 degrees Fahrenheit and grease the pie pan with butter.
- When the sweet potato is ready, put it into the stand mixer bowl.
- Turn on the mixer for about 10-15 seconds to mash the sweet potato.
- Add the sugar and mix together.
- Add the brown sugar and mix again.
- Add the eggs one by one and mix again. Make sure to scrape the sides.
- Add the butter a tablespoon at a time. Mix again until everything is combined.
- Pour into the prepared pie plate and bake for 30 minutes.
- In a medium bowl, mix the cornflakes and butter together.
- Put it on top of the pie pan and bake again for another 20 minutes.
