A moist red velvet cake with it’s smooth cream cheese frosting is a treat you can’t resist! Making the cake a day ahead of the party will save you some time and you can focus on the frosting and making the cake beautiful.
Preheat oven to 350 degrees Fahrenheit. Spray 2 9 inch cake with baking spray.
In a stand mixer, mix together flour, sugar, baking soda, salt and cocoa powder.
In a medium bowl, mix together oil, buttermilk, eggs, vinegar, food coloring, and vanilla extract.
Mix the wet ingredients into the dry ingredients. Scrape the side of the mixing bowl so everything is incorporated.
Pour batter into each pan evenly. You can use a scale to make sure they are even.
Bake for 18 to 20 minutes and check with a toothpick. It should come out clean. Cool completely before frosting. Level off the top of the cake and save the crumbs for decoration.
Frosting
Place all the ingredients in a stand mixer bowl. Mix together for about 5 minutes, scraping the sides of the bowl every 2 minutes. The frosting should be light and fluffy.
