Pear Gateau
A great cake for breakfast, snack or dessert!! Also a great pair with a cup of tea with lemon.

Ingredients
3-4
small ripe pears
peeled and sliced lengthwise

cups
flour
1/2
tsp
baking powder

pinch
salt
1
cup
butter
room temperature
1 1/4
cup
sugar
1
lemon, zested
1/4
tsp
vanilla extract

eggs
room temperature
Instructions
Preheat oven to 350 degrees F. Grease a 9 inch springform pan with butter.
In medium bowl sift together flour, baking powder and salt. This is the dry mixture.
In a stand mixer with the paddle attachment beat butter and sugar together until very fluffy and white.
Mix in the eggs, one egg at a time. Add vanilla and lemon zest and mix again.
Add the flour mixture slowly to the egg mixture. Do not over mix.
Pour batter into the spring pan. Arrange the pears on top.
Bake for about 60 min or until a tooth pick inserted in the center of the cake comes out clean.
