Ingredients
- 3-4 small ripe pears peeled and sliced lengthwise
- 2 cups flour
- 1/2 tsp baking powder
- A pinch salt
- 1 cup butter room temperature
- 1 1/4 cup sugar
- 1 lemon, zested
- 1/4 tsp vanilla extract
- 4 eggs room temperature

Instructions
- Preheat oven to 350 degrees F. Grease a 9 inch springform pan with butter.
- In medium bowl sift together flour, baking powder and salt. This is the dry mixture.
- In a stand mixer with the paddle attachment beat butter and sugar together until very fluffy and white.
- Mix in the eggs, one egg at a time. Add vanilla and lemon zest and mix again.
- Add the flour mixture slowly to the egg mixture. Do not over mix.
- Pour batter into the spring pan. Arrange the pears on top.
- Bake for about 60 min or until a tooth pick inserted in the center of the cake comes out clean.
