Instructions
Preheat oven to 350 degrees Fahrenheit. Spray mini muffin tin with cooking spray.
In a large bowl, mix together sugar, flour, baking powder, baking soda and salt. This is the dry mixture.
In a small bowl, mix buttermilk, vanilla, orange zest, melted butter and egg. This is the wet mixture.
Add the wet mixture into the dry mixture. Do not overmix.
With a small ice cream scoop, pour batter into the mini muffin tin. Bake for 10-12 minutes and check doneness with a toothpick.
Cinnamon Sugar Coating
In the small bowl, mix the sugar and the cinnamon.
Take the muffin tin out of the oven and cool for 5 minutes. While the muffin is still in the pan, brush the top of the muffin with the melted butter.
Roll the muffins in the cinnamon sugar mixture.
