Ingredients

- 3 tbsp sugar
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 cup buttermilk
- 1 tsp vanilla extract
- 1 tsp orange zest
- 2 tbsp butter, melted
- 1 egg, room temperature
Cinnamon sugar coating
- 1/4 cup butter, melted
- 1/2 cup sugar
- 1/2 tsp cinnamon

Instructions
- Preheat oven to 350 degrees Fahrenheit. Spray mini muffin tin with cooking spray.
- In a large bowl, mix together sugar, flour, baking powder, baking soda and salt. This is the dry mixture.
- In a small bowl, mix buttermilk, vanilla, orange zest, melted butter and egg. This is the wet mixture.
- Add the wet mixture into the dry mixture. Do not overmix.
- With a small ice cream scoop, pour batter into the mini muffin tin. Bake for 10-12 minutes and check doneness with a toothpick.
Cinnamon Sugar Coating
- In the small bowl, mix the sugar and the cinnamon.
- Take the muffin tin out of the oven and cool for 5 minutes. While the muffin is still in the pan, brush the top of the muffin with the melted butter.
- Roll the muffins in the cinnamon sugar mixture.
