Carrot Cake
  1. Preheat oven to 350 degrees F. Grease and flour a 8 inch and 6 inch pan.
  2. In a medium bowl, mix together flour, baking soda, baking powder, salt and cinnamon.
  3. In a stand mixer bowl, mix together eggs, oil, white sugar and vanilla.
  4. Add the dry mixture and mix again.
  5. Stir in carrots. Pour into prepared pan 3/4 of the way in each pan. You’ll have extra batter. Do not overfill.
  6. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Cream Cheese Frosting
  1. In a stand mixer bowl, mix together butter, cream cheese, confectioners’ sugar and vanilla.
  2. Beat until the mixture is smooth and creamy.
  3. Frost the cooled cake.
