Carrot Cake Bar
It’s carrot cake in a bar! A delicious bar that taste just like carrot cake!! And it has carrots in it so it must be healthy!

Carrot Cake
  1. Preheat oven to 350 degrees F. Line an 8×8 pan with aluminum foil.
  2. In a small bowl, mix together flour, cinnamon, baking soda and salt.
  3. In a stand mixer, mix together the melted butter and brown sugar.
  4. Add egg and vanilla and mix again.
  5. Add dry mixture into the bowl. Beat until combined. Add the shredded carrots and mix again.
  6. Pour onto the 8×8 pan. Set aside.
Cream Cheese
  1. Mix together the cream cheese, sugar, egg yolk and vanilla extract until smooth.
  2. Add dollops of the cream cheese mixture on top of the Carrot cake. Using a knife swirl the mixture together.
  3. Bake for about 25-30 minutes until when the toothpick inserted comes out clean. Let cool before cutting into it.
