- 1 egg
- 1/3 cup vegetable oil
- 2/3 cup milk
- 1/2 cup grated queso fresco
- 1 1/2 cup tapioca flour
- 1 tsp salt

Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Spray the mini muffin pan with cooking spray.
- In a blender, put all the ingredients and pulse until everything are mixed together and smooth. Scrape the sides and pulse again.
- Fill the prepared mini muffin pan about 2/3 of the way.
- Bake in the oven for 15 minutes. It will look more like a popover than a muffin.
