Banana Peanut Butter Whoopie Pie
This is Elvis’ favorite duo!! Delicious peanut butter frosting sandwiched between 2 soft banana cookies.

Banana Cookie

Peanut Butter Frosting

creamy peanut butter

powdered sugar

Instructions
Banana Cookies
Preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
In a medium bowl, combine the flour, baking powder, baking soda and salt. This is the dry ingredients.
In a stand mixer, cream butter, sugar and brown sugar until it’s light and fluffy.
Add the eggs and vanilla extract. Mix again.
Add the mashed bananas and mix again.
While the machine is in low speed, gently add in the flour and mix until just combined.
Scrape the sides and bottom of the bowl so everything is mixed thoroughly.
With a small ice cream scoop, drop the cookies unto the prepared baking sheet and space it apart.
Bake for about 12-13 minutes until golden brown. Cool on wire racks.
Peanut butter frosting
In a stand mixer, mix together butter and peanut butter.
While the mixer is in low speed, add the powdered sugar 1 cup at a time. Be sure to scrape the sides and bottom of the bowl so everything is combined.
Stir in vanilla extract and salt and mix again.
While the mixer is in low speed, add the milk until it reached the right consistency.
Spread the frosting into the bottom on one cookie and top it off with another cookie.
