Love is in the air!!!! For the VALENTINE month, I’ll have lots heart-inspired bakes. We are starting with Pink Cupcake and Vanilla Buttercream!!!
Valentine’s Day. For some it’s a day to celebrate and for some it’s a day of pressure!! For me, Valentine’s Day has lots of memories. Getting flowers from the hubby, making valentine cards for the boys’ classmates. and the best one is making valentine box!! At first I didn’t know that you can decorate the box. So I just used an old box and put some sticker on it. But then as the boys got older, I get more and more creative. It was so much fun. It’s one of those things that I look forward to in January. This year my son wants a Fortnite theme box. Wish me luck!!
For this month, all the desserts are either going to be in the shape of a heart, the color of pink or red and for sure delicious!! Now it’s time to make your Pretty Pink cupcake and vanilla buttercream!
In your stand mixer, add all the dry ingredients together, which are flour, baking powder, baking soda, salt and sugar.
Add the cubed cold butter and keep mixing until you get it to what’s equivalent to a crumble.
Just like this ..
Gently add the eggs one by one into the stand mixer and mix again.
Pour in the milk and mix it again.
Add the vanilla extract and mix for a few seconds.
Then add the gel food coloring. Gel food coloring makes a deeper and more saturated color so you really don’t need a lot.
So purrtyyyyyy …. What a great pink color!!!
Scoop it into the the muffin pan and bake for about 15-18 minutes.
Now, the frosting! In a stand mixer, mix the softened butter with the powdered sugar.
Add the vanilla extract and mix again.
Add the milk and mix again..
And after mixing for a few minutes and scraping the sides a few times, you will have a beautiful vanilla buttercream!!
Put the buttercream in a piping bag and pipe away!!
Then you can decorate it with anything you like!!! As you can see, I put on the heart chocolate on top. Would you like to know how to make it? It’s your lucky day because when you keep scrolling you’ll see how easy it is to make it!!
Making the chocolate candy is sooooooo easy!!! Melt 1 cup of candy melt (pink off course!!) and 2 tbsp of shortening in 30 seconds increments in the microwave. Don’t forget to stir in between so that it will melt thoroughly.
Use the heart plastic mold, pour in the candy melt into it.
After about 10 minutes, pop the heart out and put it on top of the cupcake.
And voila!!! A great and easy to make treat to bring to your office or school!! What a start to VALENTINE month!!

- 1 1/4 cups flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1/2 cup butter cold, cut into pieces
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup buttermilk
- 1/2 tsp pink gel food coloring
- 1 cup butter, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 2-4 tbsp milk
- 1 cup pink candy melt
- 2 tbsp shortening

- Preheat the oven to 350 degrees F. Line a cupcake pan with cupcake liners.
- In a stand mixer bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- Add the butter and mix it in until the mixture resembles crumbles.
- Add the eggs one at a time, mixing after each addition.
- Add the vanilla and buttermilk, and mix until combined.
- Add the pink food coloring and mix again until all the colors are combined. With a spatula scoop from the bottom of the bowl and mix again. Make sure that the batter are all pink.
- Scoop the batter into the prepared pan. Bake 15 – 18 minutes, or until the tops spring back when lightly touched.
- Remove from oven and let cool.
- In a stand mixer bowl, beat the softened butter.
- Add the powdered sugar and vanilla extract. Mix again.
- While the machine is on, add the milk 1 tbsp at a time until you get the desired consistency.
- Using a piping bag, pipe the frosting on the cooled cupcake.
- In a small microwavable bowl, put 1 cup of candy melt and 2 tbsp shortening.
- Heat it up in the microwave in 30 seconds increments. After every 30 seconds, make sure to mix it so the bottom of the bowl does not get burned. I usually do about 2-3 of the 30 seconds increments.
- Pour into the plastic mold. After 10 minutes, pop the candy out of the mold. Put the candy on top of the frosting.
