PB n J muffins!!! It’s salty and it’s sweet so you’ve got both cravings done in the morning!
I mean, look at that muffin!! The strawberry jam that’s oozing is my favorite part. I think Peanut butter and jelly is a true classic combination. I grew up in Indonesia so I didn’t grow up with it. I was introduced PB n J when I moved to the states and I was a fan!!! Sweet and salty is always a great combination!
Muffins are a great recipe to make because of a few things. If you are a beginner baker, your chance of making a successful recipe is about 99% success. The basic instructions for making muffins are to mix the wet ingredients into the dry ingredients. Then when you have a batter, you add all the add-ins or toppings to the batter. It’s pretty straightforward. Also, it’s a fast recipe to make. You don’t need to grease and flour any pans, because you’re using muffin liners. It doesn’t take long to do it, but if you can save time, why not !! Now the best part about muffins, is the baking time. Muffins usually take less time to bake. And the faster the baking, the faster we can eat it!!
The beginning of this recipe is combining the dry ingredients in a stand mixer bowl. Mix together flour, sugar, baking powder and salt. I like to let the machine run for about 2-3 minutes to make sure that everything is combined.
In a measuring cup, whisk together all the wet ingredients, which are milk, eggs, and oil. Then pour it into the stand mixer and mix again.
Add in the peanut butter then mix again. This time I use the smooth peanut butter, but next time I want to try using the chunky peanut butter and see how it comes out!
Scoop the batter into the muffin liners. Use an ice cream scoop to get the same amount of batter in each muffins.
Add a dollop of Strawberry Jam on top of each muffin.
After 18-20 minutes, you get to enjoy this beauty!!! Again, I love the sweet and salty combination of this recipe!! I hope this recipe makes your morning a great one!!

In a stand mixer, combine all of the dry ingredients, which are flour, sugar, baking powder, and salt. In a measuring cup, mix together the milk, eggs, oil. This is the wet ingredients. Add the wet ingredients to the dry ingredients. Mix until just combined. Add the peanut butter and mix again. Scoop the batter into the muffin pan using an ice cream scoop. Add a dollop of jelly to the top of the batter. Bake for 17-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.Peanut Butter Jelly Muffins
