Mmm mmmm mmmm…. Peanut butter banana bread is our new favorite breakfast treat!!!! The trick is to use really ripe bananas!!! And the peanut butter really adds another flavor!!! Another yummy treat for PEANUT BUTTER MONTH!!!
Quick!! Save 3 bananas and let it ripen!!! There are a few ways to ripen banana. There’s the let it ripe naturally. There’s the brown bag method, where you put banana and an apple in a brown bag for a few days. And the last one, which I’ve never tried before, is to do it in the oven! Bake your banana in a 300 degree oven until the peel turn black et voila! Ripen bananas! Which one is your preferred method??
I like banana bread because it’s great for breakfast and for snack. And the peanut butter really add depth to the banana bread. It just gives another flavor to it but it’s not overpowering. Are your bananas ready?? Let’s bake this Peanut Butter Banana Cake!!
In a stand mixer bowl, mix together the 2 butters, peanut butter and butter until it’s smooth.
Add the sugar and eggs, and mix to combine.
Alternatively, add the flour and banana. So it should be a little bit of flour, then banana, then flour, then banana, then flour.
Add the chocolate chips and nuts. Now I personally like it without any add on, but the kiddos of course love it with chocolate chips!!
Pour it into a greased 3×5 loaf pan and bake for about 50-55 minutes.

- 1 3/4 cup flour
- 3/4 tsp baking soda
- 1/2 Teaspoon Salt
- 1/3 cup butter room temperature
- 1/3 cup creamy peanut butter
- 2/3 cup sugar
- 2 eggs
- 1 cup bananas ripe and mashed (2-3 Medium bananas that have gone freckly)
- 1 cup chocolate chips

- Preheat oven to 350 degrees F. Grease a 3x5 loaf pan with cooking spray.
- In a small bowl, mix together the flour, baking soda, and salt. This is the dry mixture. Set aside.
- In a stand mixer bowl, combine the butter, and peanut butter until smooth.
- Add the sugar and eggs. Mix until combined.
- Alternatively add the flour mixture and mashed bananas. So it should be flour, banana, flour, banana, flour. Mix it in between the adding of the flour and bananas.
- Add the chocolate chips. Mix again.
- Pour the banana bread mixture into the prepared loaf pan.
- Bake for 50-60 minutes. Tent with foil the last few minutes to avoid a dark crust.
- Cool for 5 minutes and invert into a wire rack.
- Let cool before slicing the bread.
