It’s not PEANUT BUTTER month if it doesn’t have Peanut Butter and Jelly Bars!!! Easy to whip up the night before and have it for breakfast or snack!
Whoever invented peanut butter and jelly must be a genius!! The sweet and salty combination of this two is just a great pair to satisfy your craving. What other combination do you think are a match? My favorites are kettle corn, caramel corn, and don’t forget, maple bacon (BACON!! ???)!! It’s amazing that people can combine 2 different things that are from different sides yet it turns out delicious!!
This peanut butter jelly bar is easy to make. And having oats in it, makes it feel less guilty in eating them. Oats are good for you, right?? ?
In a stand mixer bowl, mix together peanut butter and butter until it’s smooth.
Add packed brown sugar and mix.
Add eggs and vanilla and mix again.
Next step is to add the flour mixture to the butter mixture. Make sure to scrape down the sides and bottom of the bowl and mix again.
Take 3/4 of the oat mixture and gently press it into the bottom of the ungreased prepared pan. You want to press it but not too hard.
Then spread the strawberry jam right on top of the oat mixture. Make sure that it’s even all around.
Then add the rest of the oat mixture on top and bake!
A great snack that packs a punch!! It’s sweet, salty and crunchy from the oats! Oh, just make sure to let it cool before cutting it into bars. Enjoy!!

- 1/2 cup butter room temperature
- 1/2 cup smooth peanut butter
- 1 cup light brown sugar packed
- 1 egg
- 1 tsp vanilla
- 1 cups ¼all-purpose flour
- 1 cup quick cooking oats
- 1/2 cup old-fashioned oats
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 jar strawberry jam 12.5-ounce

- Preheat oven to 350 degrees F. Set aside an 8x8-inch square baking pan (ungreased).
- In a medium bowl combine the flour, oats, baking soda and salt. This is the flour mixture.
- In a stand mixer bowl, beat together the butter and peanut butter until creamy.
- Add the brown sugar and beat until blended.
- Add the egg and vanilla and mix until blended.
- Add the flour mixture to the butter mixture and blend on low speed until all the dry ingredients are incorporated. Make sure to scrape down the sides and bottom of the bowl and mix again.
- Take 3/4 of the oat mixture and gently press it into the bottom of the ungreased prepared pan.
- Spread the jam evenly on top of the crumble.
- Crumble the rest of the oat mixture on top in clumps. Press down on the topping gently to make the top more even.
- Bake for 25 - 30 minutes or until the top is golden brown.
- Cool completely before cutting into bars.
