It’s peach season!!! I am loving this Peach Bars!! The crumble is what makes this dessert sooo delicious. Enjoy PEACH month, y’all!!!
Oh, I am so excited about this month!!! Peaches are in season in August so it’s in the grocery store, all plump and delicious!!! If you are a big fan of peaches, then this month is your month. I’ll have Peaches recipes that are really yummy and scrumptious and easy to make!!
Now what makes this PEACH month even more fun is the peach box that I got from The Peach Truck company!! I first saw this company on Facebook last year but I missed it. But a friend of mine said that the peaches was amazing. So I made sure that this year, I signed up right away!! So this company is based in Nashville, TN. They go all around US to deliver peaches in the trucks. First you order them online and pick how many box and what date you want to pick it up. Then they send you reminder emails to pick up your box. When I picked up my box, the line was so long and they had 3 big trucks. They are really popular!!
I’m so thankful that I had a helper because the box is really heavy!! 25 lbs worth of peaches. It was sooo worth it because I got to make so many delicious peaches recipes! What’s great about this company is they even come with instructions on what to do with your peaches.
Oh and FYI, they also have pecans and jams. So if you are interested, go ahead check them out!! Hopefully there’s a truck that will come to your neck of the woods!
Here it what it looks like. I find it hard to divide in half, so here’s what I did.
Bring it together into a disc then split it in half. The first half will be used to fill the baking pan as the base of the bars and the other will go to the fridge for the crumble later.
Making the peach filling is as easy as 1-2-3. Peel and cut the peaches into slivers, combine it with sugar, flour and lemon juice, et voila! Peach filling!
Using a slotted spoon to prevent the juice to get into the base, spoon the peaches into the base and spread evenly. Then sprinkle the rest of the crumble on top of the peaches and bake!

- 3 cups flour
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 cup cold butter cubed
- 1 egg lightly beaten
- 5 cups chopped peaches
- 1/2 cup sugar
- 3 tbsp cornstarch
- 2 tsp fresh lemon juice

- Preheat oven to 350°F. Line a 9x13-inch pan with parchment paper or aluminum foil, leaving some overhang for easy removal, and set aside.
- In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder and salt.
- Add the cold cubed butter and cut it in with a pastry cutter until the mixture is crumbly and starts to come together.
- Add the egg and stir it until fully combined (you may also use the pastry cutter to help blend it in).
- Bring it together into a disc and split it in half. Press one half into the prepared pan and put the other half in a bowl and leave in the fridge while making the filling.
- Bake the crust at 350°F for 15 minutes, then set aside to cool for 5 minutes before adding the peach filling.
- Combine the chopped peaches, sugar, cornstarch, and lemon juice in a large bowl.
- Using a slotted spoon, spoon the peach filling on top of the baked crust. By using a slotted spoon, you are leaving the excess juices in the bowl. Spread it around into one even layer.
- Remove the remaining crumb mixture from the refrigerator and sprinkle it on top of the peach filling making sure to cover all the peaches.
- Bake at 350°F for 40-50 minutes or until the top is set and lightly browned and the peach filling is bubbling around the edges.
- Remove from the oven and transfer to a wire rack and leave it in the pan to cool completely.
- Once cooled, lift the bars out of the pan using the overhang from the parchment paper or foil and slice into bars.
