What an easy and great recipe for breakfast-on-the-go or for snack!! Lots of healthy ingredients to give you a boost of energy!! HONEY month ends with Oats and Honey Bars!!! It’s Leap year, y’all!!
I love baking especially when the recipe is so easy to make!! My friends tells me that when I say a recipe is easy to make, they can’t really believe me. But I have to tell you, this is really really easy. You don’t need a mixer and most of the ingredients are probably in your pantry already!!! How exciting!!!
You’re probably familiar with granola bars that promotes health and energy. But there are lots of them that are just waaaaay to sweet and I’m not sure their health benefits anymore. Now this recipe is for sure healthy because first of all it’s homemade. Every time you made something homemade it uses ingredients that are easy to pronounce. If you see the ingredient list in the back of packages, you’ll see words that are so hard to pronounce. If I can’t pronounce it, it’s probably not the best to eat. I’m not a health nut by any chance, (I mean my favorite ingredient in baking is butter!!), but those hard to pronounce ingredients kind of scares me! Now, another thing that makes this a great recipe is because of the ingredients are like healthy foods!! Oats, honey, coconut oil. And the best part about it is it’s delicious!! So what are we waiting for?! Let’s make this Oats and Honey Bars!!
Put the oats, crispy rice cereal, oat flour, brown sugar, baking soda, and salt in a large bowl and mix it up.
Add the melted coconut milk.
Add the honey. Mmm .. mmm… good!!
Add the vanilla extract and mix it all together. All the goodness and deliciousness in one
Put it into the prepared pans, press it down with the back of a measuring cup and try to get an even layer.
After 20 minutes, ta da!!!! And it smells so good!!! When you make it, it’s so mouthwatering and you just want to eat it right away!! But wait till it cools!! It only takes about 15 minutes to cool down and for you to enjoy!!
Cut into bars and look at this beautiful bars!!! Enjoy with coffee or tea or on the go!!

- 3 1/4 cups old-fashioned rolled oats
- 3/4 cups crispy rice cereal
- 2/3 cups oat flour (see notes)
- 3 tablespoons brown sugar
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 2/3 cup honey
- 1/3 cup coconut oil melted
- 2 teaspoons pure vanilla extract

- Preheat oven to 350 degrees F. Line a 9- by 13-inch baking pan with parchment paper.
- In a large bowl, stir together oats, crispy rice cereal, oat flour, brown sugar, baking soda, and salt.
- Add in the honey, melted coconut oil, and vanilla. Mix together until all the ingredients are combined with a large spoon.
- Pour the oat mixture into prepared pan and press down very firmly with the back of a measuring cup. Try to get an even layer.
- Bake for 20 to 25 minutes or until light golden brown on top. Make sure that it doesn't
- Remove from oven and cool in pan for 10 minutes. Take out the bar by taking out the parchment paper and lay on a cutting board.
- Cool for 5 more minutes and then cut into 12 bars. You want to cut it before it hardens.
- Cool completely and store in an airtight container.
- To make the oat flour, put 1 cup of old fashioned oats into a chopper or a food processor. Grind it until it becomes a fine powder
