Since it’s such rich dessert, were going to go minis!! NORDIC WARE has so many bundt pans to choose. But when I saw the Tea Cakes Bundt pan, I couldn’t resist making this Mini Chocolate Lover’s Bundt Cake!
I am such a big fan or Nordic Ware!!! When I saw this mini bundt pan, I thought “The desserts I could make with this cutie!!!” I love how Nordic ware has such a variety of bundt pans. Different molds (Have you seen the Crown Bundt pan), different seasons (The Easter collection is really cute too), and also different sizes (I like to call them Regular, Mini, and Oh so cute!!). Now look at this bundt pan.
Too cute!!! And it means less calories!!! 😛 It really just has many pans for every occasion and many sizes to choose from. And if you’re looking for recipes for that pan, you can just scroll down and find many recipes that they have on the website. Yay for Nordic Ware!!
To make this recipe you only need to use 1 bowl. That makes this recipe at the top of the list!! Are you just like me? Not a big fan of washing dishes? I have a friend that loves washing the dishes but does not like to cook or bake. I’m the other way around!! I love baking but not a big fan of washing dishes. It’s a good thing I have boys that can help me out with the EATING and the WASHING!! 😛
Add the dry ingredients to the stand mixer bowl and mix them until it’s well combined. Then you add the wet ingredients but leave out the coffee. You will add that later. Once the dry and wet ingredients are combined, on a LOW speed, gently pour in the hot coffee into the bowl. Then mix, again on a low-speed, until all is combined.
Now the pan. I was going to use cooking spray to grease it because I know that brushing it with butter will not get all the nooks and crannies to be completely covered. But when I saw the direction on the wrapper, it said that to use Baker’s Joy which is a baking spray that already has flour in it. So here’s a lesson that I learned. Always read the instructions on new pans!! It doesn’t hurt to double triple check so that you will not ruin your pan. Now since this is a mini bundt pan, it does not take too long to bake them. That means you can enjoy them without waiting too long!! How awesome is that!!
While you finish all your batter, (You will have about 4 batches), you can make the ganache. Just put the heavy cream and chocolate chips on microwave safe bowl. Heat it up in 30 seconds increments until you can mix it with a whisk.
Once all the mini bundt are baked, I like to use a whisk to drizzle the ganache. Remember to use foil on your baking sheet so it’s not a big mess.
Sprinkle some more dark chocolate chips and enjoy! It’s a great dessert to feed a crowd!
Tips for making this Mini Chocolate Lover’s Bundt Cake :
- Make sure to thoroughly but lightly grease the bundt pan
- Only fill 1/2 of the cavity because it will puff up
- After you make the ganache, make sure to pour right away while it is still pourable. The ganache will harden a little and will not be pourable.

- 1 3/4 cups flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 eggs
- 2 tsp vanilla extract
- 1 cup freshly brewed coffee
- 1/2 cup heavy cream
- 2/3 cup dark chocolate chips
- 1/3 cup dark chocolate chips, chopped into little pieces

- Preheat oven to 350 degrees F. Grease the mini bundt pan with Baker's Joy spray.
- In a medium bowl, mix together the buttermilk, oil, eggs and vanilla. This is the wet mixture.
- In a stand mixer bowl, mix together flour, sugar, baking soda, baking powder and salt until combined.
- On low speed, add the wet mixture into the stand mixer bowl.
- Add coffee slowly into the batter. Mix again until it is just combined.
- Divide the batter into the pan. Only fill 1/2 of each cavity because it will overflow if you fill more.
- Bake for 15 minutes or until an inserted toothpick comes out clean.
- Flip unto wire rack and let cool.
- Put heavy cream and 2/3 of the chocolate into a microwave safe bowl. Heat up the mixture in a microwave with a 30 seconds increments until the chocolate is melted.
- Whisk until it becomes a smooth mixture. Pour onto the bundt cake.
- Sprinkle the top with chopped dark chocolate chips.
