Have you ever seen the Nutcracker during the holidays? Well, it sure is the inspiration for 9 Ladies Dancing!!! The 9th day of 12 DAYS OF CHRISTMAS is Maple Cake with 7 Minute Frosting!!
I love this cake!! I had such a fun time making it because it’s so pretty and so unique and so easy to make!! Make cake and decorate! It really as simple as it sounds. Finding the inspiration for this cake is one of the easiest one to do out of all the days. I used to live in Calgary, Canada and you know what Canada is famous for? Maple syrup, of course!! So, you could say that this is an homage to my old home town!! And the inspiration for decoration are ladies dancing and of course the most famous ballet during the holidays is the Nutcracker. I personally haven’t seen it myself because it gets so busy during the holidays with parties and kids’ activities. But it is for sure on my bucket list!! Now, let’s bake this beautiful cake!!
After the usual step of creaming the butter and sugar, add the eggs and vanilla extract.
Add the dry mixture alternatively with the maple mixture of maple syrup and milk. Make sure to start with flour and end with flour.
Pour the batter into the prepared baking pans and bake for 30 minutes.
To make the 7 minute frosting, whisk together in the stand mixer, egg whites, sugar, water, milk and salt.
Make a double boiler by putting the stand mixer bowl on top of a pot of water that has simmering water. Make sure that the bottom of the bowl does not touch the water.
Keep on whisking until it’s foamy and not grainy anymore.
Then move it to your stand mixer and whisk it with the wire attachment for 7 minutes. After 7 minutes, the frosting will be light and airy and fluffy yet firm. Almost the consistency of stiff peak.
Frost one cake with the frosting.
Then add another cake on top.
Then frost all the sides of the cake.
I colored some of the frosting with pink gel food coloring. Then I use the petal piping tip and go around the cake to make ruffles.
Ta da!!! Doesn’t it look like tutu?? It’s a great cake for recitals too!!

- 2 1/4 cups all-purpose flour
- 2 1/4 tsp baking powder
- 3/4 tsp salt
- 3/4 cup butter room temperature
- 1/2 cup light brown sugar
- 3 large eggs room temperature
- 1 1/2 teaspoons vanilla
- 1 cup maple syrup room temperature
- 1/4 cup whole milk
- 4 egg whites room temperature
- 1 1/4 cup sugar
- 1/4 tsp cream of tartar
- pinch of salt
- 1/4 cup water
- 1 teaspoon vanilla

- Preheat oven to 350 F. Grease and flour 2 8-inch cake rounds. Set aside.
- In a medium bowl, whisk flour, baking powder, and salt together. This is the dry mixture.
- In a measuring cup, stir together maple syrup and milk. This is the maple mixture.
- In the bowl of a stand mixer fitted with a paddle attachment, mix butter and sugar until light and fluffy.
- While the machine is at low speed, add eggs one at a time, beating well after each addition.
- Add vanilla and mix until combined. Scrape down the sides of the bowl.
- Alternatively add dry mixture and maple mixture, beginning and ending with flour. After all the flour is poured in, mix well until everything is combined.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out with little to no crumbs.
- Let cakes cool in the pan for 10 minutes, then invert on to a wire rack to cool completely.
- In the bowl of a stand mixer, whisk together egg whites, sugar, cream of tartar, salt and water.
- Make a double boiler by putting a stand mixer bowl over a pot of simmering water. Whisk the mixture until it is very warm and foamy.
- Remove the bowl from the pot and beat with the mixer until frosting is stiff peak and cooled. This will take about 5-7 minutes.
- Mix in the vanilla and beat again. If you want to color the frosting, you can add in gel food coloring and mix again.
- Frost the cake.
