Hooray!!! It’s the 12th day of 12th DAYS CHRISTMAS PIE AND TARTS!!!! What a better way to celebrate than with a Key Lime Pie Tower!!! Homemade graham cracker crust, tart key lime filling and topped with homemade whipped cream!!! It’s deliciousness in a tower!!!
What a fun tower to make! It took me a few months to decide what my final pie was going to be. There were a few candidates (One of them was Strawberry pie. Doesn’t it sounds good?), there were a few combinations and a lot of changes. It was really to decide. But one of deciding factor was a pie that is simple in ingredients, does not take a long time to make and it can be stacked up. So Key lime is the winner. You’ll see how easy it when you keep ready!!
First we make the crust. So easy and fast!! Combine the graham crackers crumbs with sugar, then add in the melted butter.
Press the mixture into your pie dish. Make sure to pack it it to the bottom and sides. You can use the bottom of a measuring cup to do it. Then bake it for about 8 minutes. It will be longer for the larger pie pan.
While it cools, make the filling. And it starts with lots and lots of lime zest and lime juice. I used my handy dandy electric juicer to save on time. To get 2/3 cup of lime juice, you’ll need about 10 lemons!! Imagine doing it without the machine!!
Then in a stand mixer bowl, mix the egg yolk and lime zest.
Then add one of my favorite liquid in the whole wide world, condensed milk, into the mixer and mix again.
Then add the lime juice that you squeezed with all your heart and you’ve got key lime filling!
Pour into the crust and bake for about 8-10 minutes.
Hello my beauties!!! I was so excited when it was done. It was a lot of crust making and lots of lime squeezing!! Now this recipe is for you to make a 9-inch pie. But if you want to make this tower, here are what you need.
- 6-inch, 9-inch, 12-inch pie pans
- 4 batch of the crust
- 3 batch of the filling
Then I assemble it with the help of some straws and cake board, et voila! Key Lime Tower!!! It’s a great dessert for wedding, birthdays or even for Key Lime Lovers who really love key lime pies!!

- 1 1/4 cup graham cracker crumbs
- 2 tbsp sugar
- 5 tbsp butter melted
- 3 egg yolks
- 2 teaspoons lime zest
- 1 can sweetened condensed milk 14-ounce
- 2/3 cup freshly squeezed Key lime juice
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract

- Preheat the oven to 350 degrees F.
- In a medium bowl, combine the graham crackers and sugar.
- Add the melted butter and mix together until combined.
- Press the mixture into the bottom and side of a pie pan, forming a neat border around the edge. Bake the crust until set and golden, 8 minutes. Set aside on a wire rack; leave the oven on.
- In a stand mixer, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes.
- Gradually add the condensed milk and continue to beat until thick, 3 or 4 minutes longer.
- Lower the mixer speed and slowly add the lime juice, mixing just until combined, careful not to overmix. Pour the mixture into the crust.
- Bake for 10 minutes, or until the filling has just set. Cool on a wire rack, then refrigerate. Freeze for 15 to 20 minutes before serving.
- In a stand mixer bowl using the whisk attachment, whip together heavy cream, powdered sugar and vanilla extract. Keep whisking until stiff peaks are just about to form. Make sure not to over-beat. Decorate the top of the pie.
