INITIALS CAKE WITH VANILLA CAKE AND VANILLA BUTTERCREAM

Here’s a graduation cake that you can customize for any graduates!! Use their initial to make the shape of the cake and use their school colors (Go Wildcats!!) to decorate the cake!!! Another joyous cake for GRADUATION month!!

During graduation week, families are usually really busy.  The celebration, the farewell parties with friends, the packing for college.  So here is a really easy vanilla sheet cake recipe that you can bake swiftly and serve a crowd.  

Beat the butter for about 2-3 minutes until it’s light and fluffy.  Then add the sugar and the eggs. 

Then add the vanilla extract.  

Then alternatively add the flour mixture and the milk, and end with flour mixture.  So it should be flour, milk, flour, milk and flour. 

                                 

Lightly spray a 9×13 pan with cooking spray and pour in the batter.  Bake for about 30-35 minutes until inserted toothpick comes out clean. 

Once the cake is done, let cool on a wire rack and invert. 

Score the initial using a ruler and toothpick.  Then make the cut. 

And decorate!!!  I used the colors of his school which is maroon and white.  The color can be custom made to your graduate’s school.  Use piping tips #8, #2D, and #30.  

I have to say this is one of my favorite bakes so far. Maybe because it has so many meaning behind it. What a way to celebrate your graduate!!

Vanilla Cake
  1. Preheat oven to 350 degrees F. Spray a 9x13 baking pan with a cooking spray.
  2. In a bowl, together the flour, baking powder, and salt. This is the flour mixture.
  3. In your stand mixer, beat the butter (about 1-2 minutes) until its light and fluffy. Gradually add the sugar and beat until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
  5. Add the vanilla extract and beat until combined.
  6. Then alternatively add the flour mixture and the milk, and end with flour mixture.  So it should be flour, milk, flour, milk and flour. 
  7. Bake 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. Place the cakes on a wire rack to cool for 10 minutes. Then invert the cake.
Vanilla Buttercream
  1. Beat butter on a medium speed for 30 seconds until smooth.
  2. Mix in vanilla extract and salt on a low speed.
  3. Slowly add in 7 cups of powdered sugar, 1 cup at a time. Half way through add in 3 Tbsp of heavy cream or milk to make it easier to mix.
  4. Mix on low until the ingredients are fully incorporated and the desired consistency is reached.
  5. If the frosting is too thick, add in 1 tbsp of cream (1 Tbsp at a time). If the frosting is too thin, add 1/4 cup of powdered sugar. Add the desired color.
