INDONESIAN POTATO CUPCAKE (KUE LUMPUR)

Happy Independence Day to my home country of Indonesia!!!  Celebrating INTERNATIONAL month with a traditional Indonesian snack, Kue Lumpur or Indonesian Potato Cupcake!!

Welcome, How are you and Thank you!!!  I am so happy to be able to share this recipe with all you.  It’s an Indonesian recipe and its my favorite recipe at that!!  Yay!!!  It’s a 2 in 1!!!  

Oh I almost forgot!  Just like the other recipes, here are 5 fun facts about Indonesia!!

1. Indonesia has 17,508 islands!!  I’ve been to only 3 of them ?

2. We are the home of the world’s largest wizard in the world, the Komodo dragon.  Here’s a picture of me with one of them!!

 

 

3. The world’s largest flower, Rafflesia Arnoldi, weighs up to 7 kg (15 pounds) and only grows on the island of Sumatra, Indonesia. Its petals grow to 0.5 meters (1.6 feet) long and 2.5 cm (1 inch) thick.

4. The most famous island of Indonesia is Bali.  Beautiful beaches, beautiful temples, beautiful culture and one of the most famous tourist destination.  But just to be clear, Bali is part of Indonesia and not it’s own country.  

5. We love our rice!! Indonesians eat rice at breakfast, lunch and dinner!  We even eat rice with noddle!!  ???

 

This recipe is very simple and very delicious.  It can be done in under 1 hour!!  The traditional recipe is usually made with the steaming method and you will need to have a special pan that you can only get from Indonesia.  So here’s is the baked version that you can make with mini muffin tin.  

First, mix together the eggs, egg yolks and sugar in a stand mixer bowl until it becomes light yellow.  

 

 

Then add the flour, a pinch of salt and butter and mix again.

 

 

Add the coconut milk and mix again.

 

 

Add the mashed potato and mix thoroughly.  Scrape the sides and bottom of the bowl so everything is mixed in together.  

 

 

 

Pour it into the prepared mini muffin about 2/3 of the way. 

 

 

 

Bake for 30 minute and it’s done!!

 

 

I have to tell you that this potato cupcake is my Kryptonite!   I can’t stop eating them!!  I can eat them at breakfast, at lunch, at dinner, at anytime, really!!  So whenever I bake them, I usually give them out to my friends.  If I don’t see it, I won’t eat it!!  ???

  1. Peel and dice the potatoes into small cubes. Boil for 20 minutes. Once it's soft, take it out of the water and mash it with a fork.
  2. Preheat the oven to 325 degrees F. Lightly spray the mini muffin pan with cooking spray.
  3. In a stand mixer bowl, mix together the eggs and sugar until it becomes pale yellow in color.
  4. Add the flour, salt and butter and mix again.
  5. While the machine is in low speed, add the coconut milk and mix again.
  6. Add the mashed potatoes and mix until everything is combined. Don't forget to scrape the sides and the bottom.
  7. Fill 2/3 of the muffin tin with the batter. Bake for 30 minutes.
  8. Run a knife around the cupcake and lift it up.
