Cheers to this year’s Graduates!! Here’s a vanilla cake with Egg Roll Cookies wrapped with fruit roll upas the diploma!! GRADUATION month is going to be full of celebration!!
I’m not gonna cry .. I’m not gonna cry … ???. I’m usually very excited and very happy whenever I’m writing a post but for this particular month, it’s going to be a bittersweet one.
First of all, this is the year my oldest is going to graduate. I can’t believe my baby is going to graduate High school. It’s really true that time flies!! Enjoy your babies!! Of course I’m excited for him but I am sad that he will leave us. Thank goodness that it won’t be too far (3 hours drive …. At least I don’t have to fly!!).
As the pandemic is going on right now, the moment our whole family is excited about might be cancelled. We still don’t know what’s going to happen to my son’s High School graduation. But we will celebrate him and his accomplish one way or the other. One thing I know, there will for sure be cake!! ?
The cake is very easy to make. After creaming the butter until it is light and fluffy, add the sugar and mix again.
Add the eggs one by one and mix well after each egg.
Add the vanilla extract and mix again.
Add 1/3 the dry mixture of flour, baking powder and salt.
While the machine is on low speed, add half of the milk.
Pour the batter in the prepared baking pan.
After the cake is cooled, crumb coat the cake with frosting and cool in the refrigerator. Once the cake is ready, pipe the buttercream with piping tip number 12.
For the diploma, I used egg roll cookie. Then I wrap a fruit roll up! Doesn’t it look like a diploma?! I love it!! Place as many as you want on top of the cake.
