How adorable is this Easter Eggs Lemon Cake Pops?!? For EASTER month, an Easter nest is the dessert to make for family and friends. Happy Easter!!
Alrighty!! While making this cake pops, I’ve come to an epiphany. There are some food that takes only seconds to eat, yet it takes a long time to make. There is the Indonesian snack called Risoles. It is one of my favorite snack but I rarely made them. You know why? It takes 7 different steps!!! I know because I counted them.
1. Make the filling.
2. Make the skin.
3. Make the Bread crumbs. (Yes, there are store bought bread crumbs, but homemade always taste better!)
4. Put in the filling into the skin.
5. Dip it into egg wash.
6. Dip into bread crums
7. Fry the Risoles.
And that is why I don’t make them often!! It takes almost a whole day to make it but my family eats it in a matter of seconds. So why make them again? Because it is delicious!!! ?. So the same thing is with Cake pops. You can eat them in one bite but it does take a lot of steps. And why do we make them? Because it is delicious!!! ???
Let’s start with the easiest step. The first step in the frosting. The frosting is really easy to make! Cream the softened butter in your stand mixer.
Add the powdered sugar and mix again. Don’t forget to scrape the sides!!
Add the lemon juice and lemon zest. And voila, you have lemon frosting!
Now, let’s make the cake!! Cream the sugar and butter in the stand mixer.
Add the eggs and mix again.
Add the vanilla extract and mix again.
Now add the goodness of lemons to the batter! Lemon Juice and lemon zest!! Make sure that you use fresh lemon zest and lemon juice. I also don’t zest the lemons to far in advance because it loses it’s aroma.
Now add the flour the milk. Remember the motto “Start with flour End with flour”!! So what you do is pour 1/3 of the flour and mix for 10 seconds. While the machine is on, add 1/2 of the milk. Then mix again. Add another 1/3 of the flour, pour in the rest of the milk and mix again. Then add the rest of the flour and mix until everything is evenly mixed.
Since this is going to be made into cake pops, I am just using a 13×9 baking pan and line it with aluminum foil.
Mix the frosting into the cake crumble. I like to add the frosting little by little. You can alway add more, but you can’t take it away if it’s too much.
I used a small ice cream scoop to scoop up the cake so that they are all the same size. Then I used my hands to shape them into egg shape. I usually put them in the fridge for about 30 minutes to 1 hour before dipping them into the chocolate.
Making the nest is very simple and very easy!! Freeze a baking sheet in the freezer. Then melt some chocolate candy melt and spread on the frozen baking sheet.
Using a turner, scrape the chocolate away so you get the broken chocolate pieces.
It’s dipping time!! Prepare the colored candy melt with the eggs. Remember to take out the cake about 10 minutes before dipping them so that it can be brought back to room temperature.
Insert a toothpick into an egg and dip into the chocolate. Then let it rest on a flower foam that you can get in art and crafts store.
After the chocolate dries, splatter cocoa powder that it mixed with a little bit of water with a pastry brush. You might want to cover your table with newspaper because it is a messy process!!
And voila!!! You have your very own Easter egg nest!!! Happy Easter to you and family!!
