Have you ever tried those recipes that you see on Facebook? Well, this is one of those recipe that I just couldn’t resist! It looks very simple to make, not a lot of ingredients, and it has cinnamon sugar. I love easy recipes that I know the kids will love!
We survived the first week of school!!!! Wow, I can’t believe the whole week passed by. It was really weird not having any kids at home. I do miss having them at home but it was so quiet that I can actually hear myself think!! I am really enjoying this time of peace and quiet before all the school activities and after-school activities starts.
It was really nice to have a break during summer vacation. It was nice to reset and starting fresh again. New school supplies, new friends, and new schedules. Have all your kiddos started school yet? So this recipe is made by Bobby Flay. If you are not familiar with him, here are his stats:
- He is a chef on Food Network. A very famous one and you see him in many shows.
- His specialty is Southwestern cuisine, but really, he’s good at all cuisine.
- He has 5 restaurants. I have yet to go to one of them because its all in New York.
- My favorite show of his is Beat Bobby Flay, where he goes against different chefs from different restaurants. He is so good that he usually beats them at the end. Very rarely the other chefs win. He is THAT good.
Now when I saw this video on Facebook, I thought you really can go wrong with this recipe because it is so simple that you can even prepare the dry ingredients the night before. It doesn’t take a long time to make and bake. If you are to make this in the morning, you can prepare and measure the dry ingredients the night before and then add the wet ingredients in the morning while you are preheating your oven.
One thing about this recipe that you don’t want to skip it the ORANGE. Please do not skip this because when you bite into the muffins, that orange zest will just wake you up and it just taste extra delicious!
I made this muffin as an after school snack for my son and his friend. They ate 3 in one sitting!! (I only ate 1 … Maybe 2 … Or 3 … 🙂 ) I thought the would taste like churros because of the cinnamon sugar, but the orange zest made them tangy and different than churros. This muffins are just a great snack, easy to make, and fun to eat!
Tips on making this Cinnamon Sugar Mini Muffins:
- When they come out of the oven, you want to put the melted butter on top with a brush. You don’t need to put a lot just for cinnamon sugar to stick on it.
- This will keep on the countertop for 3 days, but it might not last that long because they are so delicious! 😛

- 3 tbsp sugar
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 cup buttermilk
- 1 tsp vanilla extract
- 1 tsp orange zest
- 2 tbsp butter, melted
- 1 egg, room temperature
- 1/4 cup butter, melted
- 1/2 cup sugar
- 1/2 tsp cinnamon

- Preheat oven to 350 degrees Fahrenheit. Spray mini muffin tin with cooking spray.
- In a large bowl, mix together sugar, flour, baking powder, baking soda and salt. This is the dry mixture.
- In a small bowl, mix buttermilk, vanilla, orange zest, melted butter and egg. This is the wet mixture.
- Add the wet mixture into the dry mixture. Do not overmix.
- With a small ice cream scoop, pour batter into the mini muffin tin. Bake for 10-12 minutes and check doneness with a toothpick.
- In the small bowl, mix the sugar and the cinnamon.
- Take the muffin tin out of the oven and cool for 5 minutes. While the muffin is still in the pan, brush the top of the muffin with the melted butter.
- Roll the muffins in the cinnamon sugar mixture.
