CHOCOLATE CHIP LOAF

Easy to make breakfast? ✔️ Great with teatime? ✔️ Does it have chocolate ?  ✔️  ??? It’s LOAF month, everybody!!  All the recipes will be made in a 9×5 loaf pan.  So whip your loaf pan out and let’s make Chocolate chip loaf!

 

 

Sooo let’s see … the last time I posted a recipe was in July.  Yes it’s been a while but I had a good reason.  I was in Indonesia for the whole month of July.  It was so much fun seeing family and what’s more fun is eating all the food that I’ve missed!!  Here’s a little taste of them!

This awesome beauty is a Carp that’s butterflied and fried till it’s really crispy.  That liquid gold next to it is sweet soy sauce mixed with chilis and shallots.  Dip the fish in it and mmm mmm mmm ….  I’m salivating just writing about it!!  Yummy yummy in my tummy!!

 

 

Now this noodle is one of the best noodle in Indonesia.  It’s from a restaurant called Bakmi Gajah Mada.  The noodle is soft, the chicken is tasty and the meatball is deeeeelicious!  Every time I go to Indonesia, I always make sure to visit this restaurant.   i miss it already!

 

 

Now the last one I’m going to show you is my kryptonite.  It’s fried sweet potato.  This is something that you can get from street vendors.  The street vendors has fried sweet potato, fried banana, fried tofu, fried fritter, it’s all a fried food party!!  I know it’s not exactly a healthy diet but boy oh boy is it delicious!!

 

 

So there’s the reason why I haven’t been posting.  But now I’m back and ready to bake!!

Loaves are easy to make.  It’s the middle of a cookie and a cake.  A cake is to big and a cookie is too little.  So a loaf is great for a treat that’s not too hard and to heavy to make. After you make it, you can freeze the loaf for later.  I like to heat it up with a little bit of butter on a frying pan.  It will give you a crispy skin on the outside.

To make this Chocolate chip loaf, first you want to cream the butter together with the sugar.  Cream it until it’s light and fluffy.

 

 

Then add half of the dry mixture and half of the wet mixture.  The mixture will look a little curdled but don’t worry.  After you add everything up, it will become nice and smooth again.

 

 

This is what it looks like after you add up the rest of the dry mixture and the milk.  Nice and smooth!

 

 

Here come’s everyone’s favorite part!  Add the chocolate chips! Mix on low-speed until all the chips are mixed together.

 

 

Pour the mixture in a greased 9×5 loaf pan and bake for 40-45 minutes.

 

 

Mmmm ….  Doesn’t it make you want to make a cup of tea and eat this loaf?!?!  Have fun making it and enjoy!

 

 

Tips for making this Chocolate Chip Loaf :

  • If you want to make this fresh in the morning, I would measure out all the dry stuff at night.  In the morning, you will have less things to measure.
  • If you like nuts, you can add 1/3 cup of walnut or pecan as you add in the chocolate chips.

Chocolate Chip Loaf
A great way to start the day!! You can make this loaf 1 day ahead and serve it for breakfast or if you are an early riser, it's a great easy recipe to make in the morning!

  1. Preheat oven to 350 degrees F. Coat a 9x5 loaf pan with cooking spray and set aside.
  2. In a small bowl, mix together flour, baking soda, baking powder and salt. This is the dry mixture.
  3. In a stand mixer bowl, beat butter and sugar until it becomes light and fluffy. Add eggs one at a time and scrape the sides each time you add an egg.
  4. Add vanilla extract, scrape and then mix again. This is the wet mixture.
  5. Add half of the dry mixture and half of the milk into the wet mixture. It will look curdled but it will change once you add the rest.
  6. Add the rest of the dry mixture and milk and mix until it's well combined.
  7. Add the chocolate chips and mix for about 10 seconds.
  8. Pour the mixture into the prepared 9x5 loaf pan and bake for 45-50 minutes.
  9. Remove from oven and let cool on a cooling rack.
