Happy almost Easter!!

So this week I was looking for a cute Easter dessert on Pinterest.  There are lots of cake recipes but nothing really catches my eye.  All of a sudden, I came across this Brownies bird’s nest and I just couldn’t resist.  It’s bite size and so cute!

But I had one problem.  As I’ve shared on my about page, my definition of baking used to be “Add oil, water, and egg”.  Well, it was for a brownie mix that you get from the grocery store.  It was delicious and it’s always a success!  Never had a failure.  But when I started my year of baking challenge (You should try doing that challenge! It’s so much fun!), I said to myself, “Ok, brownies is one of your favorite dessert.  You should know how to make it for scratch!”  So I searched high and low and still couldn’t find one that’s just right.  Until…..  I found this recipe from Melanie Cooks.

So I baked it, closed my eyes, took a bite and ding .. ding .. ding ….   I felt like Goldilocks, finding something that’s jusssttt right!!  It’s moist, fudgy, not to sweet, chocolaty and all around perfect!!

Making the nest is very simple.  After you take them out of the oven, leave it in for about 5 minutes.  When it’s still warm but not too hot, take it out of the muffin pan. With your finger, gently push in the top of brownies to make the nest.  Don’t want until it’s completely cooled.

And then you just fill your little nest with mini eggs.  Nowadays, mini eggs comes in many flavors.  At the store I saw Cadbury eggs, Reese’s Pieces eggs, and Whoppers mini eggs.  I have a weakness when it comes to Whooper so I chose the Whoppers mini Robin Eggs.

This is a really easy and fast to make treats to make before this year’s Easter.  Even if you’re not making it for Easter, you can make this really fast for an after school treats for your kiddos.  And if you want to get fancy, this would be a great dessert with a scoop of vanilla ice cream and a drizzle of chocolate syrup.  🙂

  1. Preheat oven to 350 degrees fahrenheit.
  2. Spray 2 24 cup mini muffin pan with non-stick spray. Be generous so it will be easy for the brownies to pop out later.
  3. In a small bowl, mix together the butter and the cocoa powder.
  4. In the stand mixer bowl, mix eggs, sugar and vanilla. Add the butter cocoa mixture and mix. Add flour, salt and baking powder until combined. Do not overmix. With your spatula, mix a little bit just to get the bottom part of the bowl.
  5. With a small ice cream scoop, fill the mini muffin cups. Bake for 13 minutes.
  6. While it's still warm, make a nest by pushing it with your index finger.
  7. Fill the nest with mini chocolate eggs.
Recipe Notes

If you are making it in a 9x13 pan, bake for 25 minutes.  You do want this to be a little bit under baked.
