Here is a 2-in-1 dessert!!! Brownies and Cookies combined and you’ve got BROOKIE!!! You really can taste both of them! We are almost to the finish line. Here is the 11th days of 12 days of Brownies and Bars!!

Now this bar is unique but it doesn’t mean its ingredients are unique. Most of them are pantry staples and the usual star of the show, butter and eggs. This recipe is so simple. So simple that this would be a fun recipe to make with the kiddos. Christmas baking, here we come!!
Let’s start with the Brownies layer. In a stand mixer bowl, mix together the melted butter, sugar and vanilla extract. Then add in the eggs one by one and mix well.
Then add in the dry mixture of flour, cocoa powder, baking powder and salt.
Pour it into the greased 9×13 baking pan and put it to the side.
The next one is the cookie layer. In a stand mixer bowl, mix together butter, light brown sugar, sugar and vanilla extract. Then add in the egg and mix it together.
Then add in the flour, baking soda and salt, then add in the chocolate chips.
Once its ready, put the cookie batter on top of the brownie batter
Gently spread the cookies on top of the brownies layer. Make sure to be nice and gently so that the cookie layer won’t be mixed in with the brownies layer. So easy to make, right??

- 1/2 cup butter melted
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1/2 cup flour
- 1/3 cup cocoa powder
- 1/4 tsp baking powder
- 1/8 tsp salt

BROWNIE LAYER

- Preheat oven to 350° F. Grease a 9" x 13" baking pan with cooking spray.
- In a small bowl, whisk together flour, cocoa powder baking powder, and salt. This is the dry mixture.
- In a stand mixer bowl, mix together melted butter, white sugar, and vanilla extract until it is well combined.
- Add in the eggs one by one and mixing well after each addition.
- Add the dry mixture, and mix until everything is just combined. Make sure to scrape the bottom and the side of the bowl, and use a spatula to do the final mix. Pour the brownie batter into the prepared pan. Set aside.
- In a medium bowl, whisk together flour, baking soda, and salt. This is the dry mixture.
- In a stand mixer bowl, beat together softened butter, light brown sugar, white sugar, and vanilla extract for about 3 minutes, until mixture is creamy.
- Add 1 egg and mix it together for about 2 more minutes until the mixture is light and creamy.
- Gradually add in the dry mixture into bowl and mix until the dough is combined.
- Stir in the chocolate chips and chopped nuts.
- Carefully spread the cookie dough over the brownie layer in the baking pan.
- Bake in the preheated oven, about 20 to 25 minutes, or until a wooden toothpick inserted into the center of the brookies comes out clean.
- Cool completely and cut into bars.
