Olå from Brazil!!
CAUTION :
This bread is very cute but very addictive. My son ate 5 in 5 minutes! You’ve been warned! 😛
Now that I’ve put the caution out there, I can tell you about how I first ate this bread and how easy it is to make it. 🙂
A long time ago, my husband and I went to a Brazilian Steakhouse called Fogo de Chåo. It’s a very unique restaurant because they bring the meats to your table and put it on your plate! The meats were put on a huge skewers. They have all different kinds of meat, like beef, chicken, pork, and lamb. It was deeeelicous. If you want to have the meat come to you, you turn the sign to green. But if you want to take a break or if your stomach is saying “No More!!”, then you flip it over to red which means stop and they will stop coming to you with the meats.
But, wait! It doesn’t stop there! It comes with side dishes! There were caramelized bananas, polenta, mashed potatoes, and my favorite, PÅO DE QUEIJO. It’s that wonderful little bread that you see in the bowl on the picture. When I put that caution on top, it’s because I’ve been there. It’s really hard to stop eating them because they are so light and fluffy and chewy and just really, really yummy!
Whenever I find something that I really like, I am very motivated to make them at home. So I googled Påo de Queijo and this recipe come up from Simply Recipes. It couldn’t be any simpler! All you have to do is blend everything together (No mess! You don’t need to put the dry ingredients in a separate bowl!), bake ’em and eat ’em! It’s really that easy.
For the ingredients, I just want to say, REJOICE, GLUTEN-FREE EATER! This recipe uses tapioca flour instead of all-purpose flour. Also a friend of mine used different cheese for this recipe and she said it does not taste the same, so I think I’ll stick with the queso fresco.
Tips for making this cheese bread:
No tips! Very easy to make with the help of your blender. Enjoy!

- 1 egg
- 1/3 cup vegetable oil
- 2/3 cup milk
- 1/2 cup grated queso fresco
- 1 1/2 cup tapioca flour
- 1 tsp salt
Ingredients

- Preheat oven to 400 degrees Fahrenheit.
- Spray the mini muffin pan with cooking spray.
- In a blender, put all the ingredients and pulse until everything are mixed together and smooth. Scrape the sides and pulse again.
- Fill the prepared mini muffin pan about 2/3 of the way.
- Bake in the oven for 15 minutes. It will look more like a popover than a muffin.
