Quick!!! Look at the bananas that you have in your house. If it’s starting to get ripe, this is a perfect recipe for it! You’re gonna be Bananas for this Banana muffins!!
We have a lot of banana fans in our house. So I usually buy two hands (A group of bananas is not called a bunch but it is called a hand. Did you know that? I just learned that!) at a time but I usually end up having a lot of bananas that was ripe and already past it’s time to eat as is. So this is the next best thing from eating it. Making them into muffins.
As with all muffins, you have a dry and wet ingredients. Now most recipes call for making a well in the dry ingredients. However, for this recipe and for most muffins recipe, you do add the dry into the wet.
As with most batters, after you put in the dry into the wet ingredients, you do not want to mix it too much. You have to be gentle and baby it so it don’t become tough. After you mix the wet ingredients, take it off the stand mixer so you’re not tempted to put in all the dry ingredients with your mixer. Mix it by hand just until everything is mixed together and then put your spatula down. 🙂
You can use regular muffin liner, but I had a request from someone. My son who is 6 loves to eat muffins and he especially likes it when I put it in the fancy muffin liner. And he has to eat it with a fork!! Fancy!! :):):)
You can get this lotus cups online or you might even find them in your grocery store.
After 10 – 15 minutes in the oven, you can enjoy this moist, sweet, wonderful banana muffins right away or you can have it for breakfast the next day (I don’t have that kind of patience so we usually eat it right away.) 🙂
Tips for making this muffins:
- I mashed the bananas by putting the bananas in my stand mixer and let it run for about 1 minute at a low-speed. I let the mixer do the hard work.
- If you’d like, you can add 1 more banana if you like a moist muffin. I like a crumbly one so I used just one.

- 1 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 bananas
- 3/4 cup sugar
- 1 egg
- 1/3 cup butter, melted
Ingredients

- Preheat oven to 350 degrees Fahrenheit. Put muffin liner on muffin pan.
- In a medium bowl, mix together flour, baking soda, baking powder and salt.
- In a stand mixer, cut up the bananas into small pieces. Turn on the mixer to low speed to mash the bananas. Add sugar, egg, melted butter. Take the mixer bowl out of the mixer.
- Add the dry ingredients into the banana mixture. With a spatula, gently mix until just incorporated. Using an ice cream scoop, scoop the mixture into the muffin cups.
- Bake for 25-30 minutes until the top is light brown.
