Happy 2024!!! We are starting the year with delicious Apple Walnut Streusel Muffins!! Sweet and crunchy and the crumble toppings are just the sweetness that you need to wake you up in the morning. Bake it the day before and heat it up for a great breakfast!
Whenever the New Year starts, I’m always excited because it’s like turning a new page. You get to start new things, new semester, new habit (hopefully good ones!!) and more importantly new recipes!!! I like to start slow in January because usually in December and with the 12 days of baking, I’m pretty exhausted from all the baking. I also host a few Christmas parties at our house so between the cleaning, the party, the cooking, and the baking, I like to start January with something light.
But light still means delicious!! I love this recipe because it’s sweet, crunchy from all the walnuts, and it has apples. So you are still starting the year eating some fruits! Good habits, y’all!!
We’ll start the recipe with the dry mixture. We have the usual ingredients and if you bake often, you probably have all the ingredients in your pantry, which is flour, sugar, baking powder, baking soda and salt. You can mix it in the stand mixer or in a large bowl.
Then mix all your wet ingredients in a measuring cup.
Add in the diced apple and walnuts and fold it with a spatula. Remember to toast the walnuts in the oven for 5 minutes to release the oils.
Scoop the batter into prepared muffin pans.
Now this is the best part of the muffin. The streusel!! My kryptonite is streusel, crumble, and anything that you put on top of baked goods. And it’s so easy to make. Just cut in together the COLD butter, flour, brown sugar, and cinnamon.
Spoon 1 tablespoon of the streusel on top of the muffins.
I. AM. SO. EXCITED!! Bake it for about 20 – 25 minutes and breakfast is ready!!
After baking let it cool, before devouring to let the streusel set. Then enjoy with a cup of coffee or tea!!

Bake it the day before and heat it up in the morning for a great breakfast! Preheat the oven to 375°. Line muffin pans with muffin liners. Line a baking sheet with foil. Spread the walnuts on the baking sheet. When the oven is ready, bake the walnuts for 5 minutes. Shake the walnuts halfway through the baking time. Let cool. In a stand mixer, mix flour, sugar, baking powder, baking soda and salt. In a measuring cup, mix eggs, buttermilk, and oil. Pour in the wet ingredients into the dry ingredients. Mix until just mixed, but be careful not to over-mix. Add in the chopped apples and chopped walnuts and fold it with a spatula. Using an ice cream scoop, scoop the batter into the muffin liners. Make the streusel topping by mixing together the brown sugar, butter, flour and cinnamon. Sprinkle 1 tbsp of the streusel topping on top of each muffins. Bake the muffins for a 20-24 minutes or until inserted toothpick comes out dry. Take it out of the muffin pans and cool on a baking rack. APPLE WALNUT STREUSEL MUFFINS
