Wow!!  I can’t believe it’s been 1 year!!  Time sure does fly by fast!!  Doing this blog has been so fun, so fulfilling (heart and belly!!) and a great adventure for me (See what I did there!!).  Like any other job, it does have its challenges (cake fails, picture fails, ran out of eggs and had to go to the store the second time) but 99% of the time, it really brings me so much joy.  And the best part about doing a blog?  Sharing my baked goods to family and friends.  Whenever I share my baked goods to people around me, I am just giddy with joy.  Especially when I see their faces lights up.  It’s like an energy recharge!!

To recap here are my top 5 favorite recipes (in no particular order cause I love them all!!)

Fluffy as clouds Angel Food Cake

Lemon Poppy Seed Speckled Cake

Raspberry Lemon Mini Breads

Madeleine

Melt in your mouth Caramel Flan

Do you know how I choose them?  I choose them on how much I can’t stop eating them!!  :-P:-P

Making an anniversary cake is not complicated at all.  You can make this cake over a period of days if you don’t have the time to do it in one day.  What you need is a cake for the base, stabilized whipped cream (which is whipped cream that is added with either gelatin, custard/pudding, or cornstarch), cookies (I used the Snowflake Red Velvet cookie recipe), fresh fruits and some fresh flowers.

First you make the Angel food cake on 2 9×13 pan.  Because this is going to be 2 layers, you will need to divide it into 2 pans instead of 1 angel food cake pan.  You can get the recipe right here.  Because this is the 1 year anniversary, I cut out the cake into number 1.  You can cut it out into numbers or alphabet for initials.

Next you pipe the whipped cream that is mixed with vanilla custard on top of the first angel food.

I love looking at those dollops of deliciousness!!  You want the dollops to be even size and height so when you put the second layer, it will be nice and sturdy.

Here is what the layers will look like. A little side view for you. 🙂

Then you set out all the goodies that you are going to put on top.  It’s a free-form art on what you want to put on top.  You can even move the placement of the goodies if you change your mind.

Here is the final product!!  I love how vibrant the color is and how it’s a mash-up of all the things that I love in one dessert!!

Thank you to all my readers!!  Don’t forget to enter the giveaway and choose your favorite treat.  Here’s to many more years to come!!  Happy Baking!!!

PS.  If the winner is in Dallas area, I’ll bake it for you and you can pick it up when it’s ready.  If the winner is outside of Dallas, I will send you my favorite cookbook!!
