60 MINUTE CLOVER ROLLS

Here’s another recipe for your THANKSGIVING DAY!!! Easy to make 60 minutes Clover Rolls!! You can’t beat homemade rolls!!

Ok. 2 recipes down, 2 more to go!! Are you as excited as I am?!?! ? So far we’ve covered breakfast with Overnight French Toast Casserole, then we made snack with the Crispy Chewy Maple Cookies and now we will go to dinner and make 60 minutes Clover Rolls!!

At Thanksgiving the oven is usually filled with all kind of baked good and the big event of the day, the turkey.  So this recipe is perfect to make after the Turkey is done or maybe even the day before so you can just heat it up before dinner.

As I’ve mentioned one the previous posts for THANKSGIVING DAY month, here are all the ingredients that you will need for all 4 recipes this month (The Pumpkin Bundt Cake with Chocolate Ganache is coming!!).  Not too bad right?  It’s not a humongous shopping list to add to your Thanksgiving day list because you probably already have most of the ingredients at home already.  So are you ready to make this 60 minutes Clover Rolls?  Here we go!!

Heat up milk, sugar and 2 tbsp of butter in a saucepan until everything melts together. Pour it into you stand mixer that has the dough attachment.

Then add the yeast and water to the bowl.  Make sure that the water is not too hot or to cold.  When hot water is added to yeast, it will kill the yeast and the dough won’t be able to rise.  And when you add the water that is too cold to yeast, the yeast won’t be able to be activated.  So warm water at about 105 to 110 degrees would be the yeast’s best friend.

After about 10 minutes, you can see that the yeast is foaming and it means that the yeast is activated.  Based on experience, if it’s not foamy, that means the water is not at the right temperature and you probably want to start over again so that you won’t be dissappointed with unsuccessful rolls!

Add the flour and salt and knead for about 1 minute. With the mixer still going, add remaining flour. Mix about 1 ½ minutes, or until dough starts to clean the sides of the bowl.

Place the dough in a greased bowl, then cover with a clean kitchen towel. Let it rise for 15 minutes.  Once it’s risen, cut it into 12 equal pieces.

Then roll that piece into a log and cut it into 3 equal pieces.

Then roll it into a ball with your finger.

Put 3 balls in each of the 12 muffin pan.  It’s too cute!!  Put the clean kitchen towel on top again and let it rise for another 15 minutes.

Bake it for about 9 minutes and look at this pretty 60 minute Clover Rolls!!!   Oh and don’t forget to brush them with melted butter after you take it out of the oven!!  It glistens y’all!!

I like to eat my rolls with butter.  Especially when they are nice and hot!!  And with some Turkey!!  And with some Brussel Sprouts!!!  And some ..  well you get the gist!!!  ?

60 Minute Clover Rolls

  1. Grease a 12-cup muffin tin.
  2. In a small saucepan, stir milk, sugar, and butter together. Heat over low heat just until butter melts and sugar dissolves. Cool to about 100-105 F then pour into the stand mixer bowl.
  3. Add yeast and warm water. Let stand for 5-10 minutes, or until yeast is foamy.
  4. Add 2 cups flour and salt to yeast mixture. Using a dough hook, mix on low speed for about 1 minute.
  5. With the mixer still going, add remaining flour. Mix about 1 ½ minutes, or until dough starts to clean the sides of the bowl.
  6. Knead on low speed for about 2 more minutes, or until dough is smooth and elastic – the dough will still be slightly sticky to the touch.
  7. Place dough in a greased bowl (you can use butter, shortening or cooking oil). Turn it over so that the top is greased. Cover the dough with a clean, dry dish towel.
  8. Let it rise in a warm place, free from draft, for about 15 minutes.
  9. Turn the dough onto a lightly floured surface, and divide into 12 equal pieces.
  10. Form the balls into a long dough and cut into 3 pieces. Roll into balls.
  11. Fit the 3 dough balls in each muffin cup.
  12. Cover the muffin pan with the dish towel and let the dough rise for about 15 minutes.
  13. Bake at 425ºF for 9-12 minutes, or until the rolls are golden brown.
  14. After taking it out of the oven, brush rolls immediately with melted butter.
  15. Remove from pans, and cool on wire racks.
