3rd ANNIVERSARY LEMON BUNDT CAKE

Sweet Baking Adventures is celebrating the 3rd Anniversary!!  So blessed and so grateful for three sweet and adventurous years of baking!!  Can’t wait to make more sweet and happy recipes!!  Here’s a 3 -tier Lemon Bundt Cake to celebrate 3 years of fun!!

What a wonderful 3 years of blogging!!  Time sure flies!!  When I went back at all my posts, it’s amazing that I have posted over 150 posts.  That equals to a whole lot of flour, sugar, butter and happy faces!!  And what makes this year’s anniversary even better is that my blog is in  Top 100 Baking Blogs.  How fun is that!!

To celebrate this anniversary with all of you, I made a 3 tier Lemon Bundt Cake.  Did you see what I did there??  3 year equals to 3 tiers!!  I wonder what I’m going to make for my 10 year anniversary!!  ?

Now, about how this cake was eaten, I for sure had to share this cake with some friends of mine.  Well, I saved the top tier for my family and boy did they devour this cake!!  Then I divided the rest of the cake to 3 friends!  This cake feeds a lot of people!!

If you think this cake looks complicated, think again!  It’s really simple yet really delicious and really brightens up your palate!  Great for breakfast (If you’re a “Dessert for breakfast” kind of person, and if you are, you are automatically a friend of mine!) and great for an end to a meal.   Let’s make this Lemon Pound Cake!!

In a stand mixer bowl, cream butter, sugar and salt until it’s light and fluffy.

Then add eggs one a time and mix it thoroughly after every time you put in the egg.

Add the lemon juice, lemon zest and vanilla.

Alternatively, add the dry mixture and the milk into the bowl while the stand mixer is in low speed.   Remember to scrape the sides and the bottom of the bowl to make sure that everything is mixed evenly.   I like to use my spatula at this stage.

Pour the batter into the prepared bundt pan.  Remember to bang the pan on a surface to release the air bubbles.

Bake for about 50 minutes then let it cool on a wire rack for about 10 minutes.  Invert and let it cool.  While you let it cool, you can make the glaze.   Once the cake is cooled, go ahead and pour that delicious glaze on top of the cake.

For this Anniversary cake, I double the recipe to get the 3 tier.  Beautiful, right?!

LEMON BUNDT CAKE
  1. Preheat the oven to 350˚F (180˚C). Grease a 10-inch (25-cm) bundt pan with nonstick spray.
  2. In a medium bowl, whisk together the flour and baking powder. This is the dry mixture
  3. In a stand mixer bowl, cream the butter, sugar, and salt until it's light and fluffy, about 3 minutes.
  4. Add the eggs, one at a time, and mix completely after each addition.
  5. Add the lemon zest, lemon juice, and vanilla and mix again.
  6. Alternatively, add flour and milk, starting with flour and ending with flour. Scrape down the sides and bottom of the bowl with a rubber spatula to make sure everything is combined.
  7. Spoon the batter into the pan and smooth the top. The batter should only fills up about 2/3 of the pan. Gently tap the pan against the counter to release any air bubbles.
  8. Bake the cake for 50 minutes, until a toothpick inserted in the center comes out clean.
  9. Put the finished cake on a wire rack and let cool in the pan for 10 minutes.
  10. Invert the cake onto a wire rack set over a baking sheet and remove the bundt pan. Let cool completely.
LEMON GLAZE
  1. Sift the powdered sugar into a medium bowl. Add the lemon juice and lemon zest. Whisk until smooth.
  2. Pour the glaze on top of the cake.
Recipe Notes

If you are to make the 3 tiers, make the batter 2 times.  You will have leftover batter.
